Rosti is a dish that is made from potatoes and rosti is a dish that comes from Switzerland. Rosti started as a common breakfast dish that was eaten by the farmers that lived in Bern Switzerland. But, today Rosti is eaten in all parts of Switzerland. Many Swiss people think of Rosti as a national dish and it is more often served as a side dish with meat and vegetables instead of being eaten for breakfast. Rosti is made from potatoes which are shredded and are usually mixed with some kind of fat such as oil. They are shaped either round or presses into patties which are different sizes. They are either shallow fried or they can be baked in the oven. A number of other ingredients are added to rosti such as cheese onions, bacon, apples, or fresh herbs. There is a difference of opinion whether to use boiled or raw potatoes when making rosti. The best potatoes for rosti are widely disputed. If rosti is a side dish and meat is the main dish the, boiled potatoes are used to make rosti because it allows rosti to soak up some of the juices and sauces from the meat. On the other hand, if rosti is served as the main dish especially if it is served with cheese, then raw potatoes are used to make rosti. Rosti is sometimes considered unhealthy because of the butter or oil that is used to make it. A similar Jewish dish called latkes is like rosti and is served during Hanukkah.
