Lipids are generally fatty acids that are water-insoluble compounds. These are normally soluble in organic solvents but may exhibit minimal hydrophilic (water-loving) properties. Lipids can be classified in several ways with the most popular being into three classes: phospholipids, steroids and triglycerides. Lipids have several biological functions which include cell membrane structure, energy storage, as hormones and in interactions with vitamins.
