Bigos is a traditional Polish stew that is a part of traditional Polish cuisine. It is very popular in Poland, Austria, and Germany because Bigos is similar to Germany’s mainstay of Sauerkraut. Bigos is a stew made from cabbage and meat. Again, it is similar to Germany’s Sauerkraut but Bigos is less sour. There is no standard recipe to Bigos because the recipe varies from town to town and family to family. Sometimes, brand new ingredients will be added to bigos in every generation. That way Bigos is different in every generation and family and the recipe is passed down from family to family and family member to family member.
