Rollmops

The term rollmops refers to a pickled herring fillet rolled around a piece of pickled cucumber, or a pickled onion. The whole thing is usually held together with one or two small wooden skewers. Rollmops are generally sold ready-to-eat, in jars. The marinade usually consists of water, white vinegar, salt, a bit of sugar, onion rings, peppercorns and mustard seeds. Rollmops can be eaten by themselves or on bread. In the United States, pickled herring is often sold and consumed in a sour-cream based sauce, as well as in the more traditional, Scandanavian style, wine and vinegar marinades. Herring have been a food source, especially for northern Europeans, back to 3000 B.C. There are numerous ways the fish is served and many regional recipes: eaten raw, fermented, pickled, or cured by other techniques. Environmental Defense suggests Atlantic herring (Clupea harengus) to be the most Ecological choice for eating.
