The Peach Melba is a French dish that is eaten as a dessert. French cuisine is well known in large part because of its desserts. The Peach Melba was created in London in order to honor an Austrian personality. It combines two favorite summertime fruits: peaches and raspberry sauce. The Peach Melba can be topped off with vanilla ice cream.

History and Origin

The Peach Melba was first created in either 1892 or 1893 by Auguste Escoffier at the Savoy Hotel in London England. He had heard Nellie Melba who was a famous opera singer performs at the Covent Garden and was inspired to make a dessert just for her. It is claimed that she loved ice cream but she was afraid to eat it because she thought ice cream would hurt and damage her vocal cords. Auguste created a sauce that had raspberries, red current jelly, sugar, and corn starch in it. In Peach Melba, the vanilla ice is only one ingredient in the entire recipe. Therefore, the Peach Melba wouldn’t be cold, so it wouldn’t harm Nellie Melba’s vocal cords.

Presentation and validation

He served the Peach Melba at a dinner that she was serving and he served the Peach Melba in an ice sculpture of a swan. This presentation of the Peach Melba was inspired by her performance in Lohengrin. After the event, the Peach Melba became a classic French dessert. The Peach Melba was entered in Sky One’s The World’s Greatest Dishes competition. But, it didn’t win because food critics thought it was over decorated.
