Enzymes are proteins which speed up chemical reactions. Enzymes are not themselves altered by the reaction but they lower the activation energy required for the reaction allowing the process too occur in a much shorter time. Due to this enzymes are essential to life as most biological processes would otherwise be too slow. Enzymes however are easily denatured by heat and so specific conditions much be maintained to allow their proper function.
